Grilled Garlic Cheese Grits

Ingredients

  • 4 cups water
  • 1 cup uncooked old fashion grits
  • 1 teaspoon salt
  • 4 ounces shredded cheddar cheese
  • 1 -2 clove garlic, minced
  • 1 tablespoon olive oil

Method

  1. In a saucepan, boil the water and gradually stir in the grits and salt. Lower the heat and let it simmer without a lid for 40-45 minutes until thickened, stirring now and then.
  2. Mix in the cheese and garlic, stirring until the cheese has fully melted. Transfer the mixture to a 9-inch baking dish coated with nonstick spray. Cover and chill for 2 to 2 1/2 hours until firm.
  3. Prepare your grill by coating the rack with nonstick spray. Slice the chilled grits into 3-inch squares. Lightly coat each side with olive oil.
  4. Place the squares on the grill, cover, and cook for 4 to 6 minutes per side until they have a light golden colour.
