Collards With Apples
This recipe transforms fresh collard greens into a tender, flavourful dish by simmering them with sweet diced apple, aromatic garlic, and a splash of dry white wine. The greens are first boiled until soft, then cooked further with the other ingredients to allow the flavours to meld beautifully. It's a straightforward side that pairs wonderfully with a variety of mains, ready in about an hour.
Ingredients
- 2 lbs fresh collard greens, cleaned and chopped
- 2 garlic cloves, minced
- 3 green onions, chopped
- 1 tablespoon olive oil
- 1 cooking apple, diced
- 1/2 cup dry white wine
- 1 teaspoon sugar
- 1 teaspoon all purpose Greek seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Method
- Place the cleaned and chopped collard greens into a Dutch oven and cover them with boiling water. Cook for 30 minutes, then drain the water away.
- Heat the olive oil in the same Dutch oven. Add the minced garlic and chopped green onions, cooking them until they become tender. Next, stir in the drained collards, diced apple, dry white wine, sugar, all purpose Greek seasoning, salt, and pepper.
- Allow the mixture to come to a boil. Once boiling, place the lid on the Dutch oven, reduce the heat, and let it simmer for 15 minutes. Stir it now and then, until the apple pieces are tender.
