This soul food recipe yields a generous pot of flavourful collard greens and cabbage. The dish is built on a rich base of bacon fat and ham hocks, simmered with onion and spices. The greens cook until tender before the cabbage is added at the end. Collard Greens and Cabbage

Ingredients

  • 2 medium ham hocks
  • 1 onion, chopped
  • salt, to taste
  • pepper, to taste
  • crushed red pepper flakes, to taste
  • garlic powder, to taste
  • 4 bunches collard greens, cleaned and cut
  • 1 head cabbage, cleaned and cut up
  • 2 -3 tablespoons bacon fat

Method

  1. Place the bacon fat into a large stock pot.
  2. If you have no saved bacon fat, cook several bacon slices directly in the pot you will use for the greens, keeping both the bacon and the rendered fat.
  3. Put the ham hocks into the pot, then add enough water to cover them along with the chopped onion and your chosen spices.
  4. Bring the contents to a boil and let it cook for about an hour.
  5. Introduce the prepared collard greens to the pot, put the lid on, and continue cooking until they become tender, which takes 45 minutes to an hour, or less for a firmer texture.
  6. Stir in the cabbage right at the end, cooking it just until it wilts or reaches your preferred consistency.
  7. Take out the bones and any excess fat from the ham hocks before serving.
