Awesome Collard Greens

Ingredients

  • 1 lb collard greens (or 1/2 collards, 1/2 kale)
  • 1 onion, chopped
  • 1/2 cup prepared salsa or 1 chopped tomato
  • 2 -4 garlic cloves, chopped
  • 1 1/2 cups water
  • 1/2 cup cider vinegar
  • 1 tablespoon salt, to taste
  • hot sauce, to taste

Method

  1. Rinse the collard greens thoroughly in a colander.
  2. Cut the washed greens into pieces that are bite-sized.
  3. Place all of the listed ingredients into a large cooking pot and put the lid on.
  4. Allow the contents to reach a boil, giving it a stir now and then, before lowering the heat to maintain a simmer.
  5. The greens are ready once they have reduced in volume and become tender, which typically takes about a half hour, though you may simmer them for longer.
  6. Dish up the greens along with their cooking liquid.
