Awesome Collard Greens
This vegetarian take on collard greens delivers plenty of flavour without the need for salt pork or ham hock. The dish combines chopped greens with onion, garlic, and salsa, simmered in a tangy broth of water and cider vinegar. Ingredients
- 1 lb collard greens (or 1/2 collards, 1/2 kale)
- 1 onion, chopped
- 1/2 cup prepared salsa or 1 chopped tomato
- 2 -4 garlic cloves, chopped
- 1 1/2 cups water
- 1/2 cup cider vinegar
- 1 tablespoon salt, to taste

Method
- Rinse the collard greens thoroughly in a colander.
- Cut the washed greens into pieces that are bite-sized.
- Place all of the listed ingredients into a large cooking pot and put the lid on.
- Allow the contents to reach a boil, giving it a stir now and then, before lowering the heat to maintain a simmer.
- The greens are ready once they have reduced in volume and become tender, which typically takes about a half hour, though you may simmer them for longer.
- Dish up the greens along with their cooking liquid.
