Collard Greens
This recipe prepares traditional collard greens, a nutritious member of the cabbage family. They are simmered with bacon, onion, garlic, and spices in chicken stock until perfectly tender, which takes about 30 minutes. The optional addition of brown sugar introduces a subtle sweetness. The result is a flavourful side dish, rich in fibre and vitamins, that serves four to six people.
Ingredients
- 3 -4 slices cooked bacon, cut into small pieces
- 1 medium onion (sliced or chopped)
- 4 garlic cloves, minced
- 8 cups collard greens, tough stems removed and cleaned well
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon seasoning salt
- 1 teaspoon pepper
- 1 1/2 cups chicken stock
- 1/4 cup light brown sugar (optional)
Method
- Cook the bacon pieces in a deep pot until browned, then add the sliced onion, minced garlic, and the optional 1/4 cup of light brown sugar.
- Layer the cleaned collard greens into the pot with the 1 teaspoon of crushed red pepper flakes, 1 teaspoon of seasoning salt, and 1 teaspoon of pepper. Pour in the 1 1/2 cups of chicken stock, cover the pot, and cook for about 30 minutes until the greens are tender.
- Sample the greens and modify the seasonings to your preference.
