Ingredients

  • 2 bunches collard greens
  • 1 small onions or 1 medium onion
  • 4 -6 cloves garlic, chopped
  • salt
  • pepper (optional)

Method

  1. Fill a large bowl with cold water from the tap.
  2. Submerge the collard greens in the water, remove them, and give them a rinse.
  3. Repeat this washing process a few times until the bowl water runs clear with no sediment.
  4. Remove the thick central stem from each leaf, though a slender part may remain.
  5. A good technique is to fold the leaf in half lengthways and pull the stem down and away.
  6. Dice the onion and cook it in a deep pan for a few minutes.
  7. While the onion cooks, tear or cut the prepared greens into chunks.
  8. Larger pieces are fine as they will reduce in size during cooking.
  9. Place the greens over the onion, then scatter the chopped garlic and salt, plus pepper if using, on top.
  10. Put the lid on the pan and lower the heat.
  11. Allow the greens to steam for a few minutes.
  12. Remember to look in and stir the contents often.
  13. Perfect collard greens require thorough cooking, so do not remove them too soon.
  14. Stir the greens regularly, covering the pan again after each stir.
