Collard Greens in Tomato Sauce

Ingredients

  • 2 slices bacon
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (15 1/2 ounce) can diced tomatoes, undrained
  • 2 lbs collard greens, rinsed,tough ribs and stems removed,torn into thin strips
  • hot pepper sauce (I use Tabasco) (optional)
  • red wine vinegar (optional)

Method

  1. Fry the bacon until crisp, then drain and crumble it.
  2. Cook the chopped onion in one tablespoon of the reserved bacon drippings until softened.
  3. Stir in the minced garlic, salt, pepper and the entire can of diced tomatoes with their juices.
  4. Transfer the torn collard greens and the tomato mixture into a crockpot, combining them thoroughly.
  5. Put the lid on and cook for 6 hours on the low setting or 3 hours on high, until the greens are tender.
  6. Offer hot pepper sauce or red wine vinegar on the side for adding individually, if liked.
