Collard Greens in Tomato Sauce
This dish features collard greens cooked low and slow in a crockpot with a rich base of tomatoes, onions, garlic and bacon. The method keeps the kitchen cool, making it an ideal companion for summer grilling sessions. It yields a tender, flavourful result that pairs wonderfully with classic barbecue sides. The optional addition of hot sauce or vinegar provides a tangy finish. Expect a cooking time of several hours for the greens to become perfectly soft.
Ingredients
- 2 slices bacon
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (15 1/2 ounce) can diced tomatoes, undrained
- 2 lbs collard greens, rinsed,tough ribs and stems removed,torn into thin strips
- hot pepper sauce (I use Tabasco) (optional)
- red wine vinegar (optional)
Method
- Fry the bacon until crisp, then drain and crumble it.
- Cook the chopped onion in one tablespoon of the reserved bacon drippings until softened.
- Stir in the minced garlic, salt, pepper and the entire can of diced tomatoes with their juices.
- Transfer the torn collard greens and the tomato mixture into a crockpot, combining them thoroughly.
- Put the lid on and cook for 6 hours on the low setting or 3 hours on high, until the greens are tender.
- Offer hot pepper sauce or red wine vinegar on the side for adding individually, if liked.
