Broccoli Tater Tots

Ingredients
- 2 cups broccoli florets
- 1 small shallot, minced
- 2/3 shredded cheddar cheese
- 1/2 cup panko breadcrumbs
- 2 eggs
- 1 pinch salt
- 1/4 teaspoon pepper
Method
- Set your oven to 400ºF and prepare a baking sheet with parchment paper.
- Steam the broccoli florets for 2 minutes, then chop them finely.
- Place the chopped broccoli in a large bowl and add all the remaining ingredients. Mix everything together thoroughly.
- Take a spoonful of the mixture and form it into a tater tot shape with your hands. Transfer it to the baking sheet and continue with the rest of the mixture.
