This nutritious broccoli dish is ready in just 10 minutes. Steaming the broccoli retains its vibrant colour and maximises its health benefits. It is then combined with a flavourful Mediterranean dressing made directly in the bowl with extra virgin olive oil, lemon juice, garlic, sea salt, pepper, onion, feta cheese, and sun-dried tomato for a delicious and simple side.

5-Minute Broccoli

Ingredients

  • 1 lb broccoli
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons lemon juice
  • 1 -2 garlic clove, minced
  • sea salt and pepper
  • onion
  • feta cheese
  • sun-dried tomato

Method

  1. Quarter the broccoli florets and slice the stems into 1/4" pieces, then allow them to rest for 5 minutes.
  2. Mince or press the garlic and leave it to sit for five minutes.
  3. Place 2" of water in a steamer base and bring it to a rolling boil.
  4. Add the broccoli to the steamer and cook for 5 minutes. If using stem pieces larger than 1/4", begin steaming them 1-2 minutes before adding the florets.
  5. Move the steamed broccoli to a serving bowl.
  6. To make the dressing, simply add all the remaining ingredients to the bowl with the broccoli and toss everything together.
