5 Bean Salad
This straightforward salad combines five different tinned beans with fresh red pepper and onion. It is dressed with a quick, whisked vinaigrette made from balsamic vinegar, Dijon mustard, olive oil and a seasoning blend. The result is a nutritious and satisfying dish that is more substantial than a simple green salad. You can easily add other vegetables to suit your taste.
Ingredients
- 1 (15 ounce) can cut green beans, drained
- 1 (15 ounce) can wax beans, drained
- 1 (15 ounce) can garbanzo beans, drained and rinsed
- 1 (15 ounce) can dark red kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 large red bell pepper, diced
- 1 small red onion, diced
- 1/8 cup balsamic vinegar
- 1 1/2 tablespoons Dijon mustard
- 1/4 cup extra virgin olive oil
- 1/2 tablespoon Mrs. Dash seasoning mix
Method
- Combine the olive oil, balsamic vinegar, Dijon mustard and Mrs. Dash seasoning in a jar with a lid.
- Add all the drained beans, diced red pepper and diced red onion to a large mixing bowl.
- Pour the prepared dressing over the bean mixture in the bowl.
- Toss everything together carefully to coat evenly, taking care not to crush the green beans or wax beans.
