This straightforward salad combines five different tinned beans with fresh red pepper and onion. 5 Bean Salad

Ingredients

  • 1 (15 ounce) can cut green beans, drained
  • 1 (15 ounce) can wax beans, drained
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 large red bell pepper, diced
  • 1 small red onion, diced
  • 1/8 cup balsamic vinegar
  • 1 1/2 tablespoons Dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1/2 tablespoon Mrs. Dash seasoning mix

Method

  1. Combine the olive oil, balsamic vinegar, Dijon mustard and Mrs. Dash seasoning in a jar with a lid.
  2. Add all the drained beans, diced red pepper and diced red onion to a large mixing bowl.
  3. Pour the prepared dressing over the bean mixture in the bowl.
  4. Toss everything together carefully to coat evenly, taking care not to crush the green beans or wax beans.
