4 Layer Cookie Bars
These bar cookies feature four distinct layers for a delightful mix of textures and flavours. A base of buttery crackers is topped with a sweet graham crumb mixture, followed by another cracker layer. The final topping is a creamy blend of melted peanut butter and chocolate chips. Once set, they are cut into bars for serving. This recipe yields approximately two dozen pieces.
Ingredients
- 16 ounces Club crackers
- 1/2 cup margarine
- 2/3 cup sugar
- 1/2 cup brown sugar, packed
- 1 cup graham cracker crumbs
- 1/4 cup milk
- 2/3 cup creamy peanut butter
- 1/2 cup chocolate chips
- 1/2 cup peanut butter chips
Method
- Place a single layer of crackers in the base of a buttered 13x9 inch baking pan.
- Melt the margarine in a heavy saucepan, then add both sugars, the graham cracker crumbs and milk.
- Heat the mixture until the sugars dissolve, stirring frequently, then spread it over the cracker layer.
- Top the spread mixture with another single layer of crackers.
- In a separate saucepan, combine the peanut butter, chocolate chips and peanut butter chips.
- Heat this mixture gently, stirring until it becomes smooth and creamy.
- Pour the melted topping over the crackers and leave it to set before cutting into bars.
