4-Day Citrus Marmalade
This distinctive marmalade requires four days of mostly passive preparation, resulting in a rich, dark preserve with a complex, slightly burnt note. It uses a simple combination of oranges, grapefruit, and lemon, simmered and rested with sugar. The final product is versatile, excellent as a cake filling, a spread for biscuits, or a glaze for roasted meats. The process involves several boiling and resting stages to develop its deep flavour and thick set.
Ingredients
- 2 oranges
- 1 grapefruit
- 1 lemon
- 8 cups water
- 8 cups sugar
Method
- Day 1.
- Chop the oranges, grapefruit, and lemon into small pieces. Place the chopped fruit into a heavy-based pot, add the water, and let it stand for 24-hours.
- Day 2.
- Place the pot on the stove and bring the contents to a boil. Let it boil for half an hour, then remove from the heat and set aside for another 24-hours.
- Day 3.
- Return the pot to the stove and bring it back to a boil for half an hour. Stir in the sugar until combined, then leave the mixture to stand for 24-hours.
- Day 4.
- Place the pot on a low flame and simmer the marmalade until it reaches a thick consistency, which should take about 1-1/2 hours.
- Carefully pour the hot marmalade into sterilised jars, seal them, and process in a water bath for 10-mins.
