This is a lighter coleslaw that uses a vinegar dressing instead of mayonnaise. The recipe comes from a friend of a friend. It involves making a simple boiled dressing with sugar and spices, then combining it with shredded cabbage, carrots, and onion. Once mixed, the salad can be stored in the refrigerator for an extended period, making it a convenient option for prepared meals.
Ingredients
- 1 1/4 cups white vinegar
- 1/2 cup water
- 1 cup sugar
- 1 teaspoon celery seed
- 1 1/2 teaspoons mustard seeds
- 1 1/2 teaspoons salt
- 1/2 teaspoon turmeric
- 1 cabbage (small)
- 2 carrots
- 1 onion
Method
- Bring all the dressing ingredients to a boil, continuing until the sugar has fully dissolved.
- Let the cooked dressing mixture cool down completely.
- Prepare the cabbage and carrots by shredding them.
- Chop the onion finely, then add it to the shredded vegetables and toss to combine.
- Pour the cooled dressing over the vegetable mix and toss everything together very well.
- Transfer the dressed salad into a lidded bowl and store it in the refrigerator.
- This prepared salad will keep for up to 14 days when stored in the fridge.
