Created to use up a box of raisin bran cereal, this recipe adapts a classic no-bake bar. It combines crushed cereal with rolled oats, wheat germ, and allspice, bound together with a boiled mixture of peanut butter, honey, brown sugar, and milk. The mixture is pressed flat, cooled, and cut into neat rectangles for a speedy homemade treat. This version uses a simple peanut butter but can be adapted with different nut spreads.
Ingredients
- 1 1/2 cups Raisin Bran cereal, crushed
- 1/4 cup wheat germ
- 1 cup rolled oats
- 1/4 teaspoon allspice
- 1/4 cup no-sugar-added peanut butter
- 1/2 cup brown sugar, lightly packed
- 1/3 cup honey
- 1/2 cup milk
- 1 teaspoon vanilla
Method
- Combine the crushed cereal, rolled oats, wheat germ, and allspice in a mixing bowl.
- Place the milk, brown sugar, peanut butter, and honey into a saucepan or microwave-safe dish and bring the mixture to a boil.
- Allow the mixture to boil for exactly 1 minute, then take it off the heat.
- Stir the vanilla into the hot liquid, then promptly add the dry cereal mixture.
- Mix everything together thoroughly until well combined.
- Transfer the mixture to a cookie sheet that has been lined with wax paper.
- Place a second sheet of wax paper over the top of the mixture.
- Use a rolling pin to flatten and compress the mixture firmly.
- Leave the slab to cool down completely.
- Once set, slice it into 25 rectangular bars.
