1 Minute Muffin (Low Carb)
This is a speedy low carb muffin recipe for one, prepared in a microwave. Using ground flax seeds as the base, it mixes up in a bowl before being cooked in a cup. The entire process, from mixing to a finished muffin, takes only about 6 minutes. It's a simple option for a fast, grain-free snack.
Ingredients
- 1/4 cup ground flax seeds
- 1/2 teaspoon baking powder
- 1 egg
- 1 tablespoon sour cream
- 1 pinch salt
Method
- Mix the ground flax seeds, baking powder, egg and a pinch of salt together in a small bowl using a whisk.
- Coat the inside of a large custard cup or a 4 cup Pyrex measuring cup with non-stick cooking spray or olive oil.
- Transfer the batter into the prepared cup. Microwave it for 1 minute. Check that the top is dry. if needed, microwave for an additional 5 to 10 seconds. Turn the muffin out onto a counter or board, bottom-side up, and let it dry for a few minutes.
- Note: The original version included 2 packets of Splenda, 1/4 tsp cinnamon and a few drops of vanilla extract.
