#1 in Canada Chocolate Chip Cookies
This is the celebrated recipe used in a Canadian school cafeteria, renowned for producing exceptional chocolate chip cookies. The method combines white and whole wheat flours with a generous quantity of chocolate chips. Margarine is traditional, but softened butter can be substituted if preferred. The result is a large batch of golden brown cookies that are soft and chewy in the centre. It yields approximately five dozen treats, perfect for sharing.
Ingredients
- 5 cups white sugar
- 5 cups brown sugar
- 3 teaspoons salt
- 1400 g margarine, softened
- 12 eggs
- 4 tablespoons vanilla
- 1 cup water
- 8 cups all-purpose flour
- 8 cups whole wheat flour
- 3 tablespoons baking soda
- 12 cups chocolate chips
Method
- Preheat the oven to 350 degrees F.
- Sift the all-purpose flour, whole wheat flour, and baking soda together in a bowl. Set this dry mixture aside.
- In a separate mixing bowl, cream the white sugar, brown sugar, softened margarine, and salt together until the mixture is pale and fluffy.
- Beat the eggs, water, and vanilla into the creamed sugar and margarine mixture until everything is thoroughly incorporated.
- Blend the reserved flour mixture into the wet ingredients, mixing just until combined.
- Scrape down the bowl's sides and stir in all the chocolate chips until they are evenly distributed.
- Scrape the bowl again. Use an ice cream scoop to form uniform dough balls, placing them on a cookie sheet roughly 1 - 2 inches apart to accommodate spreading.
- Bake for 10 - 15 minutes, until the cookies are golden brown externally but remain soft and chewy inside. Serve warm.
