Thai Carrot Slaw
This fresh Thai slaw offers a crisp, colourful alternative to traditional coleslaw. Coarsely grated carrots are combined with sliced red pepper, red onion and beansprouts. A simple dressing of fish sauce, lime juice, sugar and chopped chilli brings all the ingredients together. A handful of coriander stirred through just before serving adds a final aromatic touch. It's a light, flavourful side that comes together in just 15 minutes.
Ingredients
- 4 large carrots coarsely grated
- 1 red pepper deseeded and finely sliced
- 1 small red onion finely sliced
- 100g beansprout
- 1 small red chilli finely chopped
- 3 tbsp fish sauce
- 3 tbsp lime juice
- 2 tsp caster sugar
- handful roughly chopped coriander
Method
- Place the coarsely grated carrots, finely sliced red pepper and finely sliced red onion into a large bowl with the beansprouts.
- In a separate small bowl or jug, combine the finely chopped red chilli with the fish sauce, lime juice and caster sugar.
- Pour the prepared dressing over the vegetable mixture in the bowl.
- Add the roughly chopped coriander and toss everything together until well combined. Serve immediately.
