This fresh Thai slaw offers a crisp, colourful alternative to traditional coleslaw. Coarsely grated carrots are combined with sliced red pepper, red onion and beansprouts. A simple dressing of fish sauce, lime juice, sugar and chopped chilli brings all the ingredients together. A handful of coriander stirred through just before serving adds a final aromatic touch. It's a light, flavourful side that comes together in just 15 minutes.

Thai Carrot Slaw

Ingredients

  • 4 large carrots coarsely grated
  • 1 red pepper deseeded and finely sliced
  • 1 small red onion finely sliced
  • 100g beansprout
  • 1 small red chilli finely chopped
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 2 tsp caster sugar
  • handful roughly chopped coriander

Method

  1. Place the coarsely grated carrots, finely sliced red pepper and finely sliced red onion into a large bowl with the beansprouts.
  2. In a separate small bowl or jug, combine the finely chopped red chilli with the fish sauce, lime juice and caster sugar.
  3. Pour the prepared dressing over the vegetable mixture in the bowl.
  4. Add the roughly chopped coriander and toss everything together until well combined. Serve immediately.
