Green Apple Salad
This Thai-inspired salad features sharp green apples tossed in a vibrant dressing of lime juice, fish sauce, chilli and garlic. Crisp fried shallots and crushed peanuts add texture, while cherry tomatoes and fresh coriander bring freshness. It's a quick side dish, perfect to accompany grilled meat or fish, and can be prepared in about 15 minutes.
Ingredients
- 2 shallots finely sliced
- 1 tbsp vegetable oil
- 5 sharp green apples such as Granny Smiths, cored and cut into thin strips
- 1 tbsp lime juice
- 6 cherry tomatoes cut into quarters
- 2 tbsp dry roasted peanuts crushed
- handful coriander leaves, chopped
- 1 garlic clove finely chopped
- 1 red chilli seeded and finely chopped
- 1 tsp sugar
- 1 tbsp fish sauce
- juice 2 limes
Method
- Combine the garlic, chilli and sugar in a food processor and blend to create a coarse paste. Pour in the fish sauce and lime juice, then adjust the seasoning as needed.
- Cook the sliced shallots in the vegetable oil for about 5 mins until they turn golden and crisp. Use a slotted spoon to transfer them to kitchen paper to drain. Coat the apple strips with the 1 tbsp lime juice, then combine them with the quartered tomatoes and the prepared dressing. Arrange on serving plates and garnish with the crushed peanuts, crisp shallots and chopped coriander leaves.
