Chilli Slaw

Ingredients

  • 1/2 white cabbage finely shredded
  • 2 carrots grated
  • 2cm/3/4in piece fresh ginger peeled and grated
  • 1 red chilli (seeds removed if you like), chopped
  • zest and juice 2 limes
  • 1 tbsp toasted sesame seeds
  • sunflower oil
  • a little light muscovado sugar

Method

  1. Combine the shredded cabbage, grated carrots, grated ginger, chopped chilli, lime zest, and lime juice in a large bowl.
  2. Add the toasted sesame seeds and a drizzle of sunflower oil to the mixture.
  3. Season the slaw with salt according to your preference.
  4. Finish by stirring in a small amount of light muscovado sugar, adjusting to taste.
  5. The slaw can be stored in your refrigerator for up to a couple of days.
