Chilli Slaw
This Thai-style chilli slaw offers a zesty twist on classic coleslaw. It combines crisp shredded cabbage and carrot with fresh ginger, red chilli, and tangy lime. Toasted sesame seeds and a light dressing complete this vibrant side. It's a quick and flavourful dish that pairs wonderfully with various mains and can be prepared ahead of time.
Ingredients
- 1/2 white cabbage finely shredded
- 2 carrots grated
- 2cm/3/4in piece fresh ginger peeled and grated
- 1 red chilli (seeds removed if you like), chopped
- zest and juice 2 limes
- 1 tbsp toasted sesame seeds
- sunflower oil
- a little light muscovado sugar
Method
- Combine the shredded cabbage, grated carrots, grated ginger, chopped chilli, lime zest, and lime juice in a large bowl.
- Add the toasted sesame seeds and a drizzle of sunflower oil to the mixture.
- Season the slaw with salt according to your preference.
- Finish by stirring in a small amount of light muscovado sugar, adjusting to taste.
- The slaw can be stored in your refrigerator for up to a couple of days.
