These fresh Thai lettuce rolls are a vibrant, no-cook option for a buffet or starter. Crisp Cos lettuce leaves are filled with a colourful mix of shredded mango, carrot, grapefruit, radishes, and spring onions, all tossed with herbs, beansprouts, peanuts, and a punchy dressing made from chilli, palm sugar, fish sauce, and lime juice. Simply assemble and eat with your hands for a light and crunchy dish that serves 10.

Lettuce Rolls

Ingredients

  • 4 Cos lettuces
  • 1 small unripe mango peeled
  • 1 carrot peeled
  • 1/2 grapefruit segmented and cut into pieces
  • small bunch radishes sliced
  • 3 spring onions sliced into long strips
  • handful coriander leaves
  • handful kaffir lime leaves (optional)
  • 50g beansprout
  • heaped tbsp roasted peanuts chopped
  • 1 small red Thai chilli
  • 2 tbsp palm sugar or light brown sugar
  • 2 tbsp fish sauce
  • 2 tbsp lime juice

Method

  1. To make the dressing, use a pestle and mortar to pound the chilli and sugar into a paste. Incorporate the fish sauce and lime juice, pounding until everything is thoroughly combined.
  2. Rinse the lettuce under cold water. Discard the two outermost leaves. Carefully separate the remaining leaves until you reach the smaller ones. set these smaller leaves aside. Place the larger outer leaves into a food bag and store them in the fridge for future use.
  3. Using a food processor or a sharp knife, cut the mango and carrot into thin sticks. In a bowl, combine the mango, carrot, grapefruit, radishes, and spring onions with the herbs, beansprouts, and peanuts. Pour the dressing over the salad, mix well, and allow it to rest for 2 mins. Serve the salad in a bowl alongside the reserved lettuce leaves. To eat, spoon the salad mixture into the lettuce leaves.
