Mint, Lime and Cucumber Salad

Ingredients

  • 1 large cucumber peeled
  • 2 limes
  • 1 tbsp white vinegar (rice or wine)
  • 1/2 tbsp caster sugar
  • a large handful of mint leaves
  • 1 small chilli finely sliced

Method

  1. Place finely sliced half of the cucumber into a large mixing bowl. Remove the skin from the lime and cut out the segments, adding them to the bowl. Squeeze any remaining juice from the lime core into the bowl. Stir in the vinegar and sugar, then cover the bowl and refrigerate.
  2. Just before serving, slice the rest of the cucumber and add it to the bowl along with the mint leaves and sliced chilli. Toss everything to combine. Season with salt and add a little more vinegar according to your preference.
