Spicy Flank Steak

Ingredients

  • 2 cups salsa
  • 2 cups orange juice
  • 1/2 cup olive oil
  • 2 tablespoons packed brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 1 teaspoon ground ginger
  • 2 lbs beef flank steak
  • hot cooked rice
  • chopped fresh parsley

Method

  1. Combine the salsa, orange juice, olive oil, brown sugar, soy sauce, Dijon mustard, and ground ginger in a shallow non-metallic dish or a plastic bag.
  2. Place the flank steak into the mixture, ensuring it is fully coated on all sides.
  3. Cover the dish or seal the bag and place it in the refrigerator for at least 1 hours or for up to 24 hours. Cook the steak on a grill or under a broiler to your preferred level of doneness, turning it and frequently brushing with the salsa marinade.
  4. Transfer the leftover salsa mixture to a saucepan and bring it to a boil.
  5. Allow the sauce to simmer for 10 minute. While it cooks, slice the cooked steak thinly on the diagonal.
  6. Plate the sliced steak alongside hot cooked rice and spoon the warm salsa sauce over it.
  7. Finish the dish with a sprinkle of chopped fresh parsley.
