Spicy Flank Steak

Ingredients
- 2 cups salsa
- 2 cups orange juice
- 1/2 cup olive oil
- 2 tablespoons packed brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons Dijon mustard

- 2 lbs beef flank steak

Method
- Combine the salsa, orange juice, olive oil, brown sugar, soy sauce, Dijon mustard, and ground ginger in a shallow non-metallic dish or a plastic bag.
- Place the flank steak into the mixture, ensuring it is fully coated on all sides.
- Cover the dish or seal the bag and place it in the refrigerator for at least 1 hours or for up to 24 hours. Cook the steak on a grill or under a broiler to your preferred level of doneness, turning it and frequently brushing with the salsa marinade.
- Transfer the leftover salsa mixture to a saucepan and bring it to a boil.
- Allow the sauce to simmer for 10 minute. While it cooks, slice the cooked steak thinly on the diagonal.
- Plate the sliced steak alongside hot cooked rice and spoon the warm salsa sauce over it.
- Finish the dish with a sprinkle of chopped fresh parsley.
