Oven Steak
This method provides a straightforward way to prepare steak using your oven. The process involves seasoning the meat and letting it rest before cooking it in a preheated cast iron skillet with butter and fresh herbs. The result is a well browned steak cooked to your preference, all achieved without creating smoke on the hob.
Ingredients
- 2 New York strip steaks (each 8 to 10 ounces and 3/4 inch thick)
- Kosher salt and freshly ground black pepper
- 2 medium sprigs thyme
- 1 large sprig rosemary, cut in half
- 2 tablespoons unsalted butter, cold
- Special Equipment:
- one 12-inch cast-iron skillet
Method
- Season the steaks on all sides with 1 teaspoon salt and 1/4 teaspoon pepper. Allow them to rest at room temperature for 30 minutes.
- Place a rack in the centre of your oven and put a 12-inch cast-iron skillet on it. Heat the oven to 450 degrees F.
- Take the hot skillet out of the oven and add the steaks, ensuring they are not touching. Place one thyme sprig, half a rosemary sprig, and 1 tablespoon of cold butter on each steak. Put the skillet back in the oven and cook for about 4 minutes until the bottoms are deeply browned.
- Remove the skillet again and turn the steaks over with tongs. Cook for a further 2 minutes more for medium-rare or 3 minutes more for medium. Take the steaks out of the skillet and let them rest for 5 to 10 minutes before you slice and serve.
