This dish brings Latin American flavours to a classic steak. Rib-eye or sirloin steaks are coated in a spiced brown sugar rub and left to rest. While they stand, a smooth and creamy sauce is prepared by simmering tomatillos, then blending them with avocado, cream cheese, and green onions. The steaks are grilled to your preference alongside whole jalapeños and spring onions. Sliced steak is served with the vibrant green sauce, charred peppers, and a sprinkle of chopped tomato.

Beef Steak With Avocado Sauce

Ingredients

  • 2 (12 ounce) rib eye steaks or 2 (12 ounce) top sirloin steaks, cut 1 1/4 to 1 1/2 inches thick
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 8 ounces fresh tomatillos, husked and quartered
  • 1/4 cup water
  • 2 ounces cream cheese
  • 1 avocado, halved,seeded,peeled,and cut up
  • 1/4 cup sliced green onion
  • 1/2 teaspoon salt
  • 10 -12 green onions, trimmed to 6 inch lengths
  • 4 -6 jalapeno peppers
  • 1 large tomatoes, chopped

Method

  1. Remove the fat from the edges of the rib-eye steaks.
  2. Mix the brown sugar, chilli powder, garlic salt, and black pepper together in a small bowl.
  3. Press this spice mixture onto all sides of the steaks.
  4. Leave the seasoned steaks at room temperature for 30 minutes.
  5. For the sauce, place the quartered tomatillos and water into a small saucepan.
  6. Bring the contents to a boil, then lower the heat.
  7. Put the lid on and let it simmer for 5 to 7 minutes until the tomatillos are tender.
  8. Add the cream cheese to the tomatillo mixture, stirring until it has melted, then allow it to cool a little.
  9. Combine the slightly cooled tomatillo mixture, the avocado pieces, sliced green onions, and salt in a food processor or blender.
  10. Process or blend the ingredients with the lid on until you have a smooth sauce.
  11. Pour the finished sauce into a bowl for serving.
  12. Light your charcoal grill or preheat a gas grill.
  13. Place the steaks on the grill rack directly over the heat and cook to your liking, turning once halfway through the cooking time.
  14. Grill for 14 to 18 minutes for medium rare or 18 to 22 minutes for medium.
  15. Optionally, lightly coat the whole green onions and jalapeños with oil and grill the jalapeños for about 10 minutes until softened and slightly charred, turning them now and then.
  16. Once cooked, slice the steaks.
  17. Plate the sliced steak with the avocado sauce, grilled jalapeños, and the green onions.
  18. Finish with a scattering of chopped tomato.
  19. Serve immediately.
