Spicy Chipotle Creamy Corn Soup

Ingredients

  • 1/4 cup butter
  • 1 large red bell pepper, chopped
  • 1 large onion, chopped
  • 1 -2 tablespoon minced garlic
  • 1 (14 ounce) can diced tomatoes (with juice)
  • 2 cups good-quality chicken broth
  • 1 tablespoon chopped canned chipotle chile (or to taste)
  • 2 (14 ounce) cans cream-style corn
  • 1 (16 ounce) package frozen corn
  • 1 cup whipping cream (unwhipped)
  • 1/2-1 teaspoon dried oregano

Method

  1. Melt the butter in a large, heavy pot and cook the chopped onion, red bell pepper and garlic for about 5 minutes.
  2. Pour in the can of diced tomatoes along with its juice and continue cooking for 2 minutes.
  3. Place the chicken broth and chopped chipotle chile into a blender and process until smooth.
  4. Transfer this puree and the cans of cream-style corn into the pot with the vegetables, stir everything together and bring the mixture to a boil.
  5. Lower the heat and allow the soup to simmer for about 25 minutes, giving it an occasional stir.
  6. Stir in the frozen corn, whipping cream and dried oregano, then let it simmer for another 5 minutes while stirring.
  7. Serve the soup hot by ladling it into individual bowls.
