Pinto Bean, Fresh Corn and Tomato Salad

Ingredients

  • 2 cups fresh corn (about 7 or 8 ears)
  • 1 (16 ounce) can pinto beans, rinsed and drained
  • 1 cup seeded and chopped plum tomato
  • 1/2 cup chopped red onions or 1/2 cup vidalia onion
  • 1/4 cup chopped fresh basil
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh Italian parsley
  • 2 cloves garlic, minced

Method

  1. Rinse and drain the pinto beans, then chop the plum tomatoes, red onion and fresh basil.
  2. Cook the fresh corn on a barbecue or grill until it is tender.
  3. Slice the kernels from the cobs directly into a large mixing bowl.
  4. To the bowl with the corn, add the prepared pinto beans, chopped tomatoes, onion and basil.
  5. Whisk together the extra virgin olive oil, fresh lemon juice, chopped Italian parsley and minced garlic in a separate small bowl.
  6. Drizzle the prepared dressing over the salad ingredients and mix everything thoroughly.
  7. Add salt and pepper according to your taste.
