Creamy Cheesy Corn
This creamy corn side dish combines fresh or frozen corn with crispy bacon and rich cream cheese for a comforting result. The corn is simmered until tender before the cheese is melted into the mixture, creating a luscious texture. Optional milk can be added to adjust the consistency. It's a quick and satisfying recipe that serves four people.
Ingredients
- 4 slices bacon, cut up
- 6 medium fresh ears of corn or 3 cups frozen corn (thawed)
- 6 tablespoons water
- 4 tablespoons onions, finely chopped
- 1 dash pepper
- 3 ounces cream cheese, cubed
- 1 -2 tablespoon milk, if needed or desired,see recipe (OPTIONAL)
Method
- Cook the bacon pieces in a saucepan until they become crisp.
- Take the bacon out, leaving 2 tablespoons of the drippings in the pan.
- Drain the bacon on paper towels and set it aside for later.
- If you are using fresh corn, use a sharp knife to cut the kernels from the cobs at about 2/3 depth, avoiding scraping the cob.
- Place the corn, whether fresh or thawed frozen, into the saucepan along with the 6 tablespoons water, chopped onion, and a dash of pepper.
- Heat the mixture until it just begins to boil.
- Lower the heat, cover the pan, and let it simmer for 5 to 7 minutes until the corn is crisp-tender.
- Add the cubed cream cheese to the corn mixture in the pan, without draining it.
- Stir continuously over low heat until the cream cheese has fully melted.
- If you wish, stir in 1 to 2 tablespoons of milk to achieve your preferred consistency.
- Mix the reserved bacon back into the creamy corn.
- Serve the dish immediately while warm.
