Spicy Black Bean Beef With Asparagus

Ingredients

  • 1 lb asparagus
  • 2 lbs flank steaks
  • 1 tablespoon dark soy sauce
  • 2 teaspoons dry sherry
  • 1 tablespoon cornstarch
  • 2 tablespoons fermented black beans (also known as salted black bean)
  • 2 garlic cloves, minced
  • 3 tablespoons oil
  • 2 teaspoons minced ginger
  • 2 scallions, minced
  • 1/4 cup beef broth
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 2 teaspoons sesame oil

Method

  1. Slice the asparagus diagonally into 2" pieces. Cut the flank steak lengthwise into 3" wide strips, then slice these crosswise into 1/4" pieces. Combine the steak in a bowl with the dark soy sauce, dry sherry and cornstarch, tossing to coat.
  2. Rinse the fermented black beans to remove extra salt. Place them in a small bowl with the minced garlic and mash together with 2 teaspoons of the oil.
  3. Heat the remaining oil in a wok. Add the asparagus pieces and stir fry for about 3 minutes until tender yet still crisp. Transfer them to a plate using a slotted spoon.
  4. Return the wok to the heat and allow it to get very hot until smoking. Add the minced ginger, minced scallions and the mashed black bean mixture. Stir fry for roughly 30 seconds until fragrant.
  5. Add the marinated beef to the wok. Cook for 2-3 minutes until the edges are browned but the centre is still pink.
  6. Pour in the beef broth, then add the oyster sauce, sugar and the cooked asparagus. Stir fry over high heat for about 1 minute until the sauce is hot and well combined.
  7. Take the wok off the heat. Drizzle the sesame oil over the stir fry, then serve immediately.
