Spicy Beef With Asparagus and Mushrooms

Ingredients

  • 8 ounces New York strip steaks, thinly sliced
  • 2 tablespoons orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon Thai sweet chili sauce or 1 tablespoon chili paste
  • 3 green onions, sliced
  • 3 garlic cloves, minced
  • 1 inch long piece gingerroot, minced
  • 1 bunch asparagus, cut on diag into 1-1/2 in. pieces
  • 8 ounces sliced mushrooms

Method

  1. Combine the beef with the orange juice and soy sauce, then leave to marinate for 1 hour.
  2. Warm the oil in a large skillet. Introduce the chilli sauce, sliced onions, minced garlic and ginger, then stir fry for 1 minute.
  3. Place the beef and its marinade into the skillet. Stir fry for 2-3 minutes until the meat is almost cooked, then transfer it to a plate.
  4. Put the asparagus pieces into the skillet, adding a little more oil if necessary. Stir fry for about 4 minutes until tender yet still crisp, then remove to the plate.
  5. Add the sliced mushrooms to the skillet and stir fry for approximately 4 minutes.
  6. Turn the heat down to low. Return all the cooked ingredients to the skillet and heat everything through for about 1 minute.
