Seven Bone Pot Roast in the Pressure Cooker

Ingredients

  • 3 lbs 7 bone chuck roast
  • 2 tablespoons light olive oil
  • 1 sweet onion
  • 5 garlic cloves
  • 1 (14 ounce) can diced tomatoes
  • 1 1/2 cups beef broth
  • 1/3 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Method

  1. Warm the light olive oil in a large, deep pan and sear the chuck roast on both sides until browned. Transfer the roast to the base of your pressure cooker.
  2. Using the same pan and oil, cook the chopped sweet onion and garlic cloves until they begin to brown. Scatter these over the roast in the pressure cooker.
  3. Add the remaining ingredients, including the diced tomatoes, beef broth, brown sugar, Worcestershire sauce, apple cider vinegar, kosher salt, and black pepper, into the pressure cooker pot.
  4. Secure the lid and bring the pressure cooker up to high pressure. Once achieved, cook the roast at high pressure for one hour.
  5. Allow the pressure to reduce naturally using the natural release method.
  6. Once the pressure has fully released, leave the roast to rest inside the sealed pressure cooker for at least another 20 minutes.
  7. Carefully open the cooker and serve the pot roast and its sauce over rice or noodles.
