Seven Bone Pot Roast in the Pressure Cooker
This pressure cooker recipe yields a tender seven bone chuck roast with a rich sauce made from tomatoes, brown sugar, and aromatics. It is an ideal method for creating a meal with slow-cooked flavour in a fraction of the time. Ingredients
- 3 lbs 7 bone chuck roast
- 2 tablespoons light olive oil
- 1 sweet onion
- 5 garlic cloves
- 1 (14 ounce) can diced tomatoes
- 1 1/2 cups beef broth
- 1/3 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Method
- Warm the light olive oil in a large, deep pan and sear the chuck roast on both sides until browned. Transfer the roast to the base of your pressure cooker.
- Using the same pan and oil, cook the chopped sweet onion and garlic cloves until they begin to brown. Scatter these over the roast in the pressure cooker.
- Add the remaining ingredients, including the diced tomatoes, beef broth, brown sugar, Worcestershire sauce, apple cider vinegar, kosher salt, and black pepper, into the pressure cooker pot.
- Secure the lid and bring the pressure cooker up to high pressure. Once achieved, cook the roast at high pressure for one hour.
- Allow the pressure to reduce naturally using the natural release method.
- Once the pressure has fully released, leave the roast to rest inside the sealed pressure cooker for at least another 20 minutes.
- Carefully open the cooker and serve the pot roast and its sauce over rice or noodles.
