Instant Pot Black Eyed Pea Soup

Ingredients

  • 6 slices bacon
  • 1 medium yellow onion, diced
  • 2 celery ribs, thinly sliced
  • 1 large carrot, grated
  • 4 garlic cloves, minced
  • 1 cup cubed ham (1/8 inch cubes or slightly bigger)
  • 2 (32 ounce) boxes low sodium chicken broth
  • 1 teaspoon kosher sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 pinch cayenne pepper
  • 1 lb dried black-eyed peas
  • 1/2 cup wild rice
  • 1 1/2 cups chopped collard greens or 1 1/2 cups mustard greens

Method

  1. Activate the SAUTE function on your Instant Pot. Once the pot is hot, cook the bacon until browned. Transfer it to a plate lined with paper towels, then break or chop it into small pieces.
  2. Place the diced onion, sliced celery, grated carrot and minced garlic into the pot. Saute these vegetables for 5 minutes. Next, add the cubed ham, chicken broth, salt, black pepper, garlic powder, paprika, cayenne, dried black-eyed peas, wild rice, chopped greens and the reserved bacon bits.
  3. Secure and lock the lid. Select the MANUAL function with high pressure and set the timer for 28 minutes. Once cooking is complete, carefully move the switch to the VENTING position to allow the pressure to release naturally, which typically takes 7-10 minutes. Open the lid and give the soup a good stir.
  4. Allow the soup to cool down slightly until it reaches your preferred temperature for serving.
