Pulled Pork in Wolfgang Puck Pressure Cooker
This pressure cooker recipe transforms economical pork shoulder pieces into succulent pulled pork with minimal hands-on time. The meat is seasoned, browned, and then pressure cooked with broth and wine for 60 minutes before being shredded and combined with barbecue sauce. The entire process takes about 75 minutes, resulting in enough flavourful meat for 15 to 20 generous sandwiches.
Ingredients
- 5 lbs country-style pork ribs, cut into large pieces to fit into cooker (see note below)
- salt and pepper
- 1 -3 teaspoon cajun seasoning or 1 -3 teaspoon chili powder
- 2 cups chicken broth
- 1/2 cup dry sherry or 1/2 cup dry marsala wine
- 2 (20 ounce) bottles barbecue sauce, premium quality
Method
- Season the pork pieces with salt and pepper, particularly if your dry rub lacks them.
- Coat the meat thoroughly on all sides with your selected Cajun seasoning or chilli powder.
- Refrigerate the seasoned meat for a minimum of 30 minutes, or for up to 60 minutes.
- Brown the pork pieces in a large pan on the hob.
- Pour water or wine into the pan to deglaze it, then transfer this liquid to the pressure cooker.
- Place the browned meat into the cooker.
- Pour in the full 2 cups of chicken broth.
- Secure the cooker's lid and ensure the valve is set to seal.
- Choose the meat function on the appliance and programme the timer for 60 minutes.
- Once the cooking cycle finishes, disconnect the cooker from the power.
- Carefully open the lid only after the pressure has fully released, following your model's guidelines.
- Keep the cooking liquid inside the cooker.
- Take the cooked pork out and shred it using two forks.
- Place the shredded pork back into the cooker with the liquid.
- Stir the pork and liquid together until well combined.
- Incorporate one or two 20-ounce bottles of premium barbecue sauce, adjusting for your preferred sauciness.
- Mix everything thoroughly until the sauce is evenly distributed.
- Reconnect the cooker to power and select the warm function.
- Cover with a glass lid and allow the pork to stand for at least 15 minutes.
- This recipe yields approximately 15 to 20 generous sandwiches.
- Note that country-style pork ribs are actually cut from the pork shoulder, making them a very affordable option.
