This recipe creates a deliciously sweet and salty snack. Freshly popped popcorn and mixed nuts are coated in a rich, homemade caramel sauce made from sugar, butter, and corn syrup. The finished popcorn is sprinkled with coarse sea salt for a flavourful contrast. It yields 3 quarts and takes about 30 minutes to prepare and cool.

Sea Salt Caramel Popcorn

Ingredients

  • 2 quarts popped popcorn (freshly popped without butter)
  • 1 1/2 cups pecan halves
  • 1/2 cup almonds
  • 1 1/3 cups sugar
  • 1 cup butter (2 sticks)
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla
  • 1 teaspoon coarse sea salt

Method

  1. Prepare a large rimmed baking pan measuring 17-by-12 inches by lining it with foil and spraying it lightly with cooking spray, then set it aside. Lightly spray a large non-plastic bowl with cooking spray and add the popped popcorn and nuts.
  2. Place the sugar, butter and light corn syrup into a medium saucepan. Stirring constantly, bring the mixture to a boil. Attach a candy thermometer and continue boiling, stirring occasionally, until the temperature reaches 290 F, which should take about 15 minutes. Take the pan off the heat, remove the thermometer and stir in the vanilla.
  3. Pour the hot caramel mixture over the popcorn and nuts in the bowl. Stir everything together thoroughly to ensure an even coating.
  4. Transfer the coated popcorn mixture to the prepared baking pan, spreading it into an even layer. Sprinkle the coarse sea salt evenly over the top. Allow the popcorn to cool completely before breaking it into pieces for serving. Keep any leftovers in an airtight container.
