Ingredients
- 2 lbs beef round rump roast or 2 lbs chuck arm pot roast
- nonstick cooking spray
- 1/2 cup water
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon beef bouillon granules
- 1/2 teaspoon dried basil
- 4 medium potatoes, peeled and quartered
- 4 small carrots, cut into 1 inch chunks
- 1 stalk celery, cut into diagonal 1 inch chunks
- 1 small onion, chopped
- 1/4 cup cold water
- 2 tablespoons flour
Method
- Remove any fat from the roast.
- Coat a dutch oven with nonstick spray and warm it.
- Sear the roast on every side.
- Pour off the rendered fat.
- Combine the 1/2 cup water, Worcestershire sauce, bouillon granules, and basil in a bowl.
- Add this mixture to the meat and bring it to a boil.
- Lower the heat, cover the pot, and let it simmer for 1 hour.
- Place the potatoes, carrots, celery, and onion into the dutch oven.
- Cover again and simmer for another 45 to 60 minutes until the meat and vegetables are soft.
- Introduce more water if the mixture appears dry.
- Transfer the meat and vegetables to a serving platter and keep them warm.
- Pour the cooking juices into a metal bowl and set it in ice water so the fat solidifies.
- Remove the solidified fat from the top.
- Ensure you have 1 cup of pan juices, topping up with water if required.
- Mix the 1/4 cup water and flour together until smooth.
- Blend in the pan juices and pour everything back into the dutch oven.
- Cook while stirring continuously until the mixture thickens and bubbles.
- Continue cooking for another minute, then serve the gravy alongside the meat and vegetables.
