Slow Cooker Roast Beef
This straightforward recipe yields tender, flavourful roast beef with minimal preparation. A beef roast is seasoned with dry onion soup mix, black pepper, and bay leaves, then slow-cooked until perfectly tender. The method allows for optional root vegetables to be added towards the end of cooking. The resulting cooking juices can be used to create a rich gravy. It serves 6 to 8 people and requires just over 8 hours of total time, most of which is hands-off cooking.
Ingredients
- 3 -4 lbs beef roast (any cut)
- 3 bay leaves
- 1 teaspoon black pepper
- 1 envelope dry onion soup mix
Method
- Place the beef roast into the slow cooker.
- Sprinkle the dry onion soup mix over the roast to cover it.
- Add the black pepper, sprinkling it evenly over the top.
- Position the three bay leaves on top of the seasoned roast.
- Cook for 8-9 hours on a Med-Low setting, or for 3-4 hours on High.
- For an optional addition, place carrots, onions, and potatoes into the slow cooker during the final couple of hours on Med-Low, or the last hour on High. Add them in the sequence listed, as carrots require more time than potatoes.
- Use the accumulated drippings from the slow cooker to prepare a gravy.
