Comfort Pot Roast (For the Crock Pot)
This is my definitive method for pot roast, perfected over many years. It yields incredibly tender beef and carrots bathed in a flavourful gravy, making it the ultimate comfort dish. I typically serve it over mashed potatoes, dumplings, or egg noodles to soak up all the delicious sauce. The preparation is straightforward, relying on a slow cooker to do most of the work.
Ingredients
- 3 -5 lbs chuck roast
- 1 medium onion, peeled and sliced
- 1 -2 lb carrot, peeled (if thin, leave whole, if chunky, cut in half)
- 1 (1 1/4 ounce) envelope dry onion soup mix, divided
- 1 (10 3/4 ounce) can condensed cream of mushroom soup
- 2 tablespoons water
- 1 1/2 teaspoons paprika
- 1 teaspoon onion powder (from soup envelope)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
Method
- Pour 2 tablespoons of water into the base of your slow cooker.
- Arrange the prepared carrots in the bottom of the crock pot.
- Mix together the paprika, the dry onion soup powder, garlic powder, and black pepper to create a seasoning rub.
- Massage this dry rub all over the surface of the chuck roast.
- Position the seasoned roast on top of the carrots in the cooker.
- Scatter half of the leftover dry soup mix over the roast.
- Place the sliced onions in a layer over the meat.
- Dust the onions with the rest of the soup mix.
- Spread the condensed cream of mushroom soup evenly over the top.
- Allow to cook on the low setting for 8 to 10 hours.
