Grilled Beef Sirloin Tip Roast
This grilled beef sirloin tip roast is marinated for hours to achieve a tender, juicy texture with a rich, smoky flavour. The simple marinade of olive oil, garlic, teriyaki and liquid smoke infuses the meat before it is cooked over charcoal. It is an excellent choice for a weekend lunch or gathering, serving up to twelve people. The total preparation and cooking time is around 540 minutes, including marinating.
Ingredients
- 1/2 cup olive oil
- 6 cloves garlic, crushed
- 1/2 cup teriyaki marinade
- 2 tablespoons liquid smoke
- 1 (4 lb) sirloin tip roast, trimmed of fat (whole beef tenderloin can be used as well)
Method
- In a sealable plastic bag, mix the olive oil, crushed garlic, teriyaki marinade and liquid smoke thoroughly.
- Place the trimmed roast into the bag with the marinade.
- Remove the air from the bag so the marinade coats the meat, then seal it shut.
- Let the roast marinate in the refrigerator for 6-8 hours, turning it now and then, before draining.
- Position the roast on a grill rack above medium-hot charcoal coals.
- Close the grill lid and cook the meat for 45 minutes.
- Flip the roast over and continue grilling for a further 30 minutes or until it reaches your preferred doneness.
- Slice the cooked roast into pieces that are 1/2 to 3/4 inch thick.
- Present the sliced beef straight away for serving.
