Crock Pot Roast With Horseradish Sauce
This recipe yields a wonderfully tender beef roast, slow-cooked with a simple blend of dried herbs and garlic. The accompanying creamy horseradish sauce, made with sour cream, mayonnaise, and fresh garlic, provides a sharp, flavourful contrast. It's a straightforward dish ideal for serving a group, with the slow cooker doing most of the work. The key is allowing the meat to rest before slicing it thinly against the grain for the best texture.
Ingredients
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 lbs beef eye round
- 1 (8 ounce) carton sour cream
- 1/2 cup mayonnaise
- 1 tablespoon prepared horseradish (or fresh would be even better)
- 1 clove of crushed garlic or 1/8 teaspoon garlic powder
- 1 teaspoon beef bouillon granules (I didn't use.) (optional)
Method
- To prepare the roast, mix the seasonings together and rub this blend all over the beef.
- Place the seasoned roast in a slow cooker, cover it, and cook on the low setting for 8-10 hours.
- Take the cooked meat out of the cooker and allow it to rest for 15 minutes.
- Slice the rested roast thinly, cutting diagonally across the grain of the meat.
- Present the sliced beef with the prepared horseradish sauce.
- As the roast cooks, make the sauce by stirring all the listed sauce ingredients together in a bowl.
- Cover the bowl of sauce and place it in the refrigerator to chill.
