Creamy Jell-o Waldorf Salad

Ingredients

  • 1 (6 ounce) box lime Jell-O gelatin (or 2 3-oz boxes)
  • 2 cups boiling water
  • 1 1/4 cups cold water
  • 1 (3 ounce) box instant lemon pudding
  • 2 cups milk
  • 2 cups diced apples, unpeeled for color
  • 1/2 cup chopped walnuts

Method

  1. Dissolve the lime Jell-O in 2 cups of boiling water.
  2. Add 1 1/4 cups of cold water to the mixture and stir. Chill it for 1 to 1 1/2 hours until it is nearly set.
  3. Prepare the instant lemon pudding with 2 cups of milk in a large bowl, following the package instructions. Let it set in the refrigerator for 5 minutes.
  4. Blend the prepared pudding with the partially set Jell-O. Use an electric mixer on medium speed to beat the mixture for 2 minutes.
