Creamy Jell-o Waldorf Salad
This refreshing summertime salad combines lime Jell-o with creamy lemon pudding for a delightful texture. Crisp diced apples and chopped walnuts are folded in, creating a classic Waldorf-inspired dish. It is chilled until perfectly set, ideal for serving at gatherings. Ingredients
- 1 (6 ounce) box lime Jell-O gelatin (or 2 3-oz boxes)
- 2 cups boiling water
- 1 1/4 cups cold water
- 1 (3 ounce) box instant lemon pudding
- 2 cups milk
- 2 cups diced apples, unpeeled for color
- 1/2 cup chopped walnuts
Method
- Dissolve the lime Jell-O in 2 cups of boiling water.
- Add 1 1/4 cups of cold water to the mixture and stir. Chill it for 1 to 1 1/2 hours until it is nearly set.
- Prepare the instant lemon pudding with 2 cups of milk in a large bowl, following the package instructions. Let it set in the refrigerator for 5 minutes.
- Blend the prepared pudding with the partially set Jell-O. Use an electric mixer on medium speed to beat the mixture for 2 minutes.
- Gently fold in the diced apples and walnuts. Transfer the mixture to a 9x13-inch glass dish or a large serving bowl. Chill until fully set.
- Serve the salad plain, or add a dollop of Cool Whip or mayonnaise to each portion.
