Buttermilk Panna Cotta

Ingredients

  • 1 (1/4 ounce) envelope unflavored gelatin
  • 1 cup half-and-half
  • 3/4 cup sugar
  • 2 vanilla beans, split and scraped
  • 1 pinch kosher salt
  • 2 cups buttermilk, at room temperature

Method

  1. In a small bowl, sprinkle the gelatin over 2 TBS of water and allow it to stand for 5 minutes.
  2. While the gelatin softens, place the half and half, sugar, scraped vanilla seeds, vanilla pods, and a pinch of salt into a medium saucepan over medium-low heat.
  3. Let the mixture simmer for 5 minutes, stirring often to ensure the sugar dissolves and to prevent the milk from burning.
  4. Turn down the heat and stir in the softened gelatin along with the room temperature buttermilk.
  5. Pass the liquid through a fine sieve to remove the vanilla pods and any solid particles.
  6. Divide the strained mixture between eight small ramekins and allow it to cool to room temperature, which takes about 45 minutes.
  7. Move the ramekins to the refrigerator and chill them for 3 hours.
  8. For serving, briefly dip the base of each ramekin in warm water before turning it out onto a plate.
