Coffee Jello
This is a cool, shimmering dessert you eat with a spoon, offering the flavour of coffee in a unique gelatin form. It originates from Rhode Island and is a treat for true coffee enthusiasts. The recipe uses unflavored gelatin combined with cold and hot coffee, sugar, and a pinch of salt. After dissolving, the mixture is poured into dishes and chilled until firmly set. It is traditionally served with a topping of sweetened whipped cream. The entire process takes about 15 minutes of active preparation time.
Ingredients
- 2 (1/4 ounce) envelopes unflavored gelatin
- 1/2 cup cold coffee (or Kahlua)
- 3 cups hot coffee
- 1/4 cup sugar (or up to 3/4 cup according to desired sweetness)
- 1 pinch salt
Method
- Place the gelatin and cold coffee into a large bowl and mix them together.
- Let the mixture stand for 10 minutes so the gelatin can soften properly.
- Pour in the hot coffee, add the sugar and salt, then stir everything until the sugar has fully dissolved and the liquid looks clear.
- Transfer the liquid into individual dishes for serving and place them in the refrigerator to chill and set completely.
- Present each portion with a dollop of sweetened whipped cream on top.
