Broken Glass Dessert
This eye-catching dessert features cubes of three different flavoured gelatins suspended in a creamy pineapple and whipped topping mixture, all set upon a sweet graham cracker crust. It's a classic no-bake option that requires chilling time to set properly, making it an ideal make-ahead dish for gatherings. The vibrant colours create a beautiful 'broken glass' effect when sliced. The recipe yields 12 to 16 portions.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup butter or 1/2 cup margarine, melted
- 1 (3 ounce) package lime gelatin
- 1 (3 ounce) package strawberry gelatin
- 1 (3 ounce) package orange gelatin
- 4 1/2 cups boiling water, divided
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 cup pineapple juice
- 1 (8 ounce) carton frozen whipped topping, thawed
Method
- Mix the graham cracker crumbs, sugar, and melted butter together, then press this mixture firmly into the base of a greased 13-inch x 9-inch x 2-inch pan.
- Place the pan in the refrigerator to chill.
- Dissolve the lime gelatin in 1 1/2 cups of boiling water, stirring until fully combined.
- Transfer this mixture to an oiled 8 inch x 4 inch x 2 inch loaf pan and refrigerate it until completely firm.
- Follow the same process for the strawberry and orange gelatins, using 1 1/2 cups of boiling water for each.
- Sprinkle the unflavored gelatin over the 1/4 cup of cold water to soften it.
- Bring the pineapple juice to a boil, then stir it into the softened unflavored gelatin.
- Allow this mixture to cool and begin to thicken slightly.
- Put the thawed whipped topping into a large mixing bowl, then carefully fold in the pineapple juice mixture.
- Once the flavoured gelatins are firm, cut them into 1-inch cubes and gently fold them into the whipped topping mixture.
- Spread this combined filling evenly over the prepared crust.
- Refrigerate the dessert for a minimum of 2 hours before serving.
