Chocolate Chip Scones

Ingredients
- 2 cups unsifted self-rising flour
- 3 tablespoons sugar
- 1/2 cup vegetable shortening
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
Method
- Set your oven to heat to 425F.
- Lightly grease a baking sheet.
- Place the flour and sugar together in a large mixing bowl.
- Use a pastry blender or two knives to incorporate the shortening until the texture is like coarse crumbs.
- Whisk the milk, egg and vanilla together in a separate small bowl.
- Pour this wet mixture into the dry ingredients along with the chocolate chips and stir with a fork until a soft, cohesive dough forms.
- Transfer the dough to a surface dusted with flour and knead it gently 5-6 times.
- Roll the dough out with a floured rolling pin to form a 7" circle.
- Slice the round into 4 equal wedges.
- Arrange the scones on the prepared baking sheet, spacing them about 1" apart.
- Lightly press the tops with the tines of a fork.
- Bake the scones for 18-20 min.
- Continue baking until they are a golden brown colour.
