Parmesan and Basil Scones

Ingredients

  • 225 g self rising flour
  • 55 g butter
  • 25 g fresh grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon mustard powder
  • 1 1/2 teaspoons dried basil
  • 120 ml milk, plus extra as needed

Method

  1. Heat your oven to 190°C.
  2. Crumble the butter into the flour in a large bowl, using your hand to work it in until fully combined.
  3. Mix in the grated parmesan, salt, baking soda, mustard powder and dried basil thoroughly.
  4. Pour in 120 ml of milk, then continue adding milk little by little until a soft, cohesive dough ball forms.
  5. You will typically need slightly more than 180 ml in total, though this can vary with your flour and the day's humidity.
  6. On a surface dusted with flour, roll the dough into a square shape that is 1 1/2 cm (1/2 inch) thick.
  7. Cut the square into 9 equal pieces by making three horizontal cuts followed by three vertical cuts.
  8. Transfer each scone to a non-stick baking tray and bake for 12-15 minutes until they turn a light golden brown.
