Lemonade Scones
These simple scones use lemonade and cream to create a wonderfully light texture. With only five ingredients and no need for butter, they come together in moments. The dough is mixed, gently kneaded, cut, and baked until golden. Perfect for a speedy morning or afternoon tea treat, yielding eight delicious scones.
Ingredients
- 2 cups self raising flour
- 1/4 cup caster sugar
- 1/2 teaspoon salt
- 125 ml lemonade (7 up or Sprite)
- 125 ml whipping cream
Method
- Heat your oven to 220C.
- Combine the self raising flour, caster sugar and salt thoroughly in a large bowl.
- Pour in the whipping cream and lemonade, then stir to create a soft dough.
- Transfer the dough to a surface dusted with flour and give it a light knead.
- Use your hands to press and pat the dough until it is about 3/4 inch thick.
- Take a round cutter and stamp out eight scones from the dough.
- Place them on a baking tray and lightly brush the tops with milk.
- Bake for 10-15 minutes or until the scones have a light golden colour on top.
