These simple scones use lemonade and cream to create a wonderfully light texture. With only five ingredients and no need for butter, they come together in moments. Lemonade Scones

Ingredients

  • 2 cups self raising flour
  • 1/4 cup caster sugar
  • 1/2 teaspoon salt
  • 125 ml lemonade (7 up or Sprite)
  • 125 ml whipping cream

Method

  1. Heat your oven to 220C.
  2. Combine the self raising flour, caster sugar and salt thoroughly in a large bowl.
  3. Pour in the whipping cream and lemonade, then stir to create a soft dough.
  4. Transfer the dough to a surface dusted with flour and give it a light knead.
  5. Use your hands to press and pat the dough until it is about 3/4 inch thick.
  6. Take a round cutter and stamp out eight scones from the dough.
  7. Place them on a baking tray and lightly brush the tops with milk.
  8. Bake for 10-15 minutes or until the scones have a light golden colour on top.
