Chilli and Parmesan Scones
This recipe offers a delightful savoury twist on the classic scone, featuring Parmesan cheese and finely chopped green chillies. Ingredients
- 10 1/2 ounces self-raising flour
- 1 3/4 ounces butter
- 2 teaspoons baking powder
- 3 1/2 ounces parmesan cheese, grated
- 1/2 teaspoon salt
- 3 green chilies, finely chopped and deseeded
- 2 medium eggs
- 4 tablespoons milk
Method
- Sift the self-raising flour and baking powder into a mixing bowl, then rub the butter into the dry ingredients with your fingertips until the texture is like breadcrumbs.
- Stir in two-thirds of the grated Parmesan, along with the chopped chillies and salt, until well combined.
- Take another bowl and whisk the eggs together with the milk.
- Pour the combined wet ingredients into the bowl containing the flour mixture.
- Use a palette knife to mix everything until it forms a cohesive, smooth dough.
- Transfer the dough to a surface dusted with a little flour and roll it out to a thickness of about 2cm, handling it gently without kneading or twisting.
- Cut out 5 cm circles from the dough using a scone cutter or the rim of a glass.
- Gather the remaining dough scraps, roll them out again, and continue cutting until all the dough is used.
- Arrange the scones on a baking sheet lightly dusted with flour, then sprinkle the tops with the reserved Parmesan cheese.
- Bake in an oven preheated to 220 C/425 F/Gas 8 for about 15 minutes.
