Chilli and Parmesan Scones

Ingredients

  • 10 1/2 ounces self-raising flour
  • 1 3/4 ounces butter
  • 2 teaspoons baking powder
  • 3 1/2 ounces parmesan cheese, grated
  • 1/2 teaspoon salt
  • 3 green chilies, finely chopped and deseeded
  • 2 medium eggs
  • 4 tablespoons milk

Method

  1. Sift the self-raising flour and baking powder into a mixing bowl, then rub the butter into the dry ingredients with your fingertips until the texture is like breadcrumbs.
  2. Stir in two-thirds of the grated Parmesan, along with the chopped chillies and salt, until well combined.
  3. Take another bowl and whisk the eggs together with the milk.
  4. Pour the combined wet ingredients into the bowl containing the flour mixture.
  5. Use a palette knife to mix everything until it forms a cohesive, smooth dough.
  6. Transfer the dough to a surface dusted with a little flour and roll it out to a thickness of about 2cm, handling it gently without kneading or twisting.
  7. Cut out 5 cm circles from the dough using a scone cutter or the rim of a glass.
  8. Gather the remaining dough scraps, roll them out again, and continue cutting until all the dough is used.
  9. Arrange the scones on a baking sheet lightly dusted with flour, then sprinkle the tops with the reserved Parmesan cheese.
  10. Bake in an oven preheated to 220 C/425 F/Gas 8 for about 15 minutes.
