Cheesy Corn Casserole
This indulgent corn casserole is a celebrated side dish from a famous Kansas City barbecue restaurant. It features fresh corn kernels in a creamy, cheesy sauce enriched with bacon and garlic, then baked until golden. The recipe uses a blend of cream cheese, Velveeta, and sharp cheddar for maximum flavour. It serves a crowd and comes together in just under an hour.
Ingredients
- 4 slices bacon, finely chopped
- 6 tablespoons unsalted butter, cubed
- 4 garlic cloves, finely chopped
- 1/2 cup flour
- 3 cups milk
- 4 ounces cream cheese, cubed
- 2 ounces Velveeta cheese, cubed
- 2 cups sharp cheddar cheese, grated
- 1 teaspoon paprika
- 3 lbs fresh corn kernels (may sub frozen)
- kosher salt & freshly ground black pepper, to taste
Method
- Preheat your oven to 375°.
- Place the chopped bacon in a 6-qt. saucepan and cook it, stirring often, until it browns, which should take about 8 minutes.
- Stir in the cubed butter and chopped garlic, cooking just until the aroma is released, for about 1 minute.
- Mix in the flour and continue to cook while stirring for 1 minute.
- Pour in the milk while whisking, bring the mixture to a boil, and cook while stirring constantly until it thickens, about 2 minutes.
- Add the cubed cream cheese, cubed Velveeta, grated cheddar, and paprika, cooking until the cheeses melt into a smooth sauce.
- Take the pan off the heat and fold in the corn kernels, then season with salt and pepper to your liking.
- Pour the mixture into a greased 9" × 13" baking dish and bake until the top is a golden brown and the casserole is bubbling, for about 40 minutes.
