Cheesesteak Stuffed Onion Rings
This inventive recipe transforms classic flavours into a fun, shareable snack. Large onion rings are stuffed with seasoned rib eye steak and provolone cheese, then frozen solid. They are coated in a double layer of flour, egg, and panko breadcrumbs before being deep fried to a perfect golden brown. Serve them hot with a side of marinara sauce for dipping. The total preparation and cooking time is about 60 minutes, yielding four generous servings.
Ingredients
- 1/2 lb rib eye steak
- 1 tablespoon vegetable oil
- 1/2 teaspoon smoked paprika
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon cornstarch
- 4 slices provolone cheese
- 1/2 cup flour
- 3 eggs
- 1 1/2 cups panko breadcrumbs
- 2 medium white onions
- vegetable oil, for deep frying
- 1/2 cup marinara sauce, for serving
- scallion, for garnish
Method
- Allow the rib eye steak to reach room temperature, then rub it with the tablespoon of vegetable oil on all sides.
- Place a heavy skillet on the stove and heat it. Once hot, cook the steak, turning frequently, until it is rare, which should take 3 to 4 minutes in total. Transfer it to a cutting board to rest for 10 minutes before slicing it very thinly.
- In a small bowl, combine the sliced steak with the smoked paprika, salt, black pepper, and cornstarch.
- Trim the top and bottom from the onions and peel them. Slice each onion into rounds that are 1 1/2 inches thick. Separate the layers to obtain four large onion rings, reserving the leftover pieces for another use.
- Arrange the four onion rings on a large plate or a parchment-lined cookie sheet.
- Take one quarter of the steak mixture and place it on a slice of provolone cheese. Press this filling into one of the onion rings. Repeat this process with the remaining steak and cheese.
- Place the filled onion rings in the freezer for at least 2 hours, or until they are completely solid.
- Prepare three shallow bowls: one with the flour, one with the eggs beaten with a fork, and one with the panko breadcrumbs.
- Coat each frozen onion ring thoroughly first in the flour, then in the egg, and finally in the breadcrumbs. For a second coating, dip each ring back into the egg and then the breadcrumbs once more. Set them aside.
