Cauliflower Carbonara
This family meal transforms cauliflower into a creamy sauce for a lighter take on carbonara. Onion and cauliflower are simmered with stock, then blended with cheese and milk to create a smooth, flavourful coating. Crispy bacon is stirred through before mixing with your favourite pasta. It's a clever way to incorporate vegetables into a comforting dish suitable for all ages.
Ingredients
- 1 medium onion
- 300 g cauliflower
- 1 teaspoon vegetable stock powder
- 1 1/2 cups water
- 1/2 cup skim milk
- 60 g low fat tasty cheese, grated
- 3 slices bacon, chopped
- 240 g pasta
Method
- Prepare the pasta according to your preference.
- Lightly coat a saucepan with oil spray and cook the onion. Add the cauliflower, stock powder and 1 1/2 cups water, bring to a boil, then reduce to a simmer until tender, which takes approximately 15 minutes.
- Puree the cooked mixture using a blender to form a sauce. Stir in the grated cheese and 1/2 cup skim milk.
- Cook the chopped bacon in a separate frypan to your desired crispness and mix it into the prepared sauce.
- Combine the cooked pasta with the sauce and serve immediately.
