Authentic Creole Jambalaya

This traditional Creole jambalaya is a hearty one-pot dish featuring shrimp and tasso ham. The base is built by sauteing the classic trinity of onion, celery and green pepper with garlic. Tomatoes and rice are then simmered together with bay leaves and seasoning until the rice is perfectly cooked. It's a complete, flavourful meal that comes together in about 35 minutes, making it ideal for a satisfying weeknight dinner.

Authentic Creole Jambalaya

Ingredients

  • 1 1/2 lbs raw whole cleaned shrimp
  • 1 cup diced tasso
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup chopped celery
  • 2 cups canned tomatoes, chopped liquid reserved
  • 1 cup raw rice
  • 3 bay leaves
  • 1 cup water, including tomato liquid
  • salt
  • cayenne pepper

Method

  1. Cook the chopped onion, green bell pepper, celery and minced garlic in the melted butter.
  2. Add the raw shrimp and diced tasso to the pan and cook for about 5 minutes.
  3. Mix in the chopped tomatoes and continue cooking for 10 minutes.
  4. Stir the raw rice into the pot, then add the bay leaves, salt, cayenne pepper and the combined water and tomato liquid.
  5. Bring the mixture to a boil, then cover the pot and let it simmer until the rice is fully cooked.
